I thought this was a clever twist on a personal pan pizza, portabella mushroom pizza. I didn’t come up with it, I saw it on the Today show this morning. Portabella mushroom with the stem cut off [you can use it for a topping] & bake mushroom cap at 400 degrees for 8-9 minutes. For the sauce, use crushed tomatoes with seasoning mixed it & top with fresh vegetables galore & sprinkle on mozzarella cheese. Bake the pizza in the oven for 8 more minutes at 400 degrees.
